One of the developments at Bryant has been a move towards smaller picks, which seems to give the wines an extra degree of precision. Carothers gave the 2018s three days of cold soak followed by pump-overs and aeration twice a day, with punch-downs towards the end of the fermentations. The 2018s spent 25 days on the skins, which is about average for the estate.
