2007 Chateau Mouton Rothschild, Pauillac, France


Climatic conditions
From budbreak through ripening to harvest, meticulous care was lavished on the 2007 vintage in order to bring the grapes to maturity in good condition. After a relatively wet winter which allowed reserves to accumulate, budbreak began in early April. Early vegetation growth was encouraged by exceptionally dry and warm weather (16.4 mm of rain and 16°C, compared with an average of 11.7°C). Flowering took place for all three varieties around 26 May, fifteen days earlier than the average, presaging an early harvest, as in 1989 and 2003. Relatively cool weather during the summer slowed the development of the crop, but an exceptionally hot and dry September enabled the grapes to reach full phenological maturity. Harvesting began on 26 September with the Merlot and ended on 11 October with the Cabernet Sauvignon. The grapes were in good condition, with thick skins rich in tannins and anthocyans.

Tasting notes
The wine has an intense garnet hue with glittering highlights.

All the depth and refinement of Cabernet Sauvignon is expressed on the nose in aromas of vanilla, bitter almond, and nutmeg, with subtle mineral notes on airing.
Very supple on the palate, this Mouton Rothchild displays perfect harmony on a linear structure that combines tannic heft with a pleasant minty freshness. The finish is complex, ending on spicy and very ripe fruit flavours.
A great success for the vintage, the blend makes the most of two fully mature grape varieties, combining the body and complexity of Cabernet with the depth of flavour of Merlot.

Tasted at BI Wine & Spirits' 10-Years-On tasting, the 2007 Mouton-Rothschild offers classic tobacco and cigar box aromas on the nose, very well defined with black fruit unfolding in the glass. Again, like the bottle at the vertical in May last year, there is an element of Pessac-Léognan on the nose, just a hint of warm gravel. The palate is medium-bodied with fine tannin, quite compact with a foursquare finish of blackberry, tobacco and a pinch of white pepper. PACKAGING: Our premium wines need optimal temperature consistency, therefore are packaged in EPS foam shippers with gel pack (when needed) and shipped only during ideal weather temperatures.

For OWC (Original Wooden Case) orders, wine bottles will be removed from case and shipped inside a foam shipper box for safety (unless otherwise requested). The wooden case will be shipped separately at Ground service. If faster service is necessary please contact us.

WEATHER HOLD: In adverse temperature conditions, we reserve the right to withhold shipment until ideal temperatures return unless we receive explicit instructions via email to release the wines, voiding any guarantee. We will contact you if a hold is necessary.
