Appellation: D.O.C. Bolgheri Sassicaia

First vintage: 1968

Grape blend: 85 % Cabernet Sauvignon 15 % Cabernet Franc

Soil composition: The vineyards are planted on plots of land with different and composite morphological characteristics, as well as with a strong presence of limestone. These areas are also rich in rocks and rather rich in clay and are located at an altitude between 100 and 300 meters above sea level, facing West - South/West.

Vine training: Cordon spur system

Planting density: Between 3.600 to 5.500 vine stocks/Ha for older vineyards and 6.200 vine stocks/Ha for newer vineyards.

Climate: The 2007 season had a very mild winter with below average precipitation, which resulted in an early budding of about 10 days on average. Spring was mild with some rain at the right time, which allowed for a good vegetative growth leading to an advanced flowering. The development of the grapes was accompanied by a rainy June. The summer began with a hot and dry month of July, while the unusual heavy rains in the second half of August allowed for a regular ripening of the grapes.

Harvest: The ideal climate conditions in September, marked by good, dry weather and significant temperature differences between day and night, led to both the perfect ripening of all varieties of grapes as well as the conducting of the harvest at the best time.

Wine making: The primary fermentation took place in temperature controlled stainless steel vats at a temperature of 30° - 31° C. The maceration of the skins lasted 15 days for both the Cabernet Sauvignon and the Cabernet Franc, with a combination of pumping over and délestage. The malolactic or secondary fermentation also took place in the steel vats. 2007 Sassicaia

Ageing: The wine is aged for 24 months in French oak barriques and a few more months in the bottle before being released on the market.

Here's a wine of power, determination and confidence—as far as first impressions go. The 2007 Bolgheri Sassicaia leaves little hidden behind the curtain. It presents a frank and straightforward array of bold fruit, spice, leather and tobacco-like aromas that emerge from the bouquet with energy and force. The aromas are complete and genuine. The palate, however, offers more space for interpretation and review. It is finessed and nuanced, thus requiring more time to fully comprehend and appreciate. Silky tannins are followed by fine textural smoothness and a long finish. The outgoing nature of the aromas make for a fascinating contrast against the inward and reticent nature of the mouthfeel. The 2007 Sassicaia (Cabernet Sauvignon) explodes onto the palate with masses of rich, opulent fruit that caress the palate with gorgeous length and a seamless beauty that is hard to fully capture. Dark wild cherries, plums, spices, minerals and herbs develop in the glass. This is an especially bold, perhaps slightly uncharacteristic Sassicaia in its extroverted personality, but it is beautiful all the same. The inner perfume and sweetness carries through the long finish, where the sheer weight and glycerol of the fruit leaves a lasting impression. The 2007 is more than a worthy follow-up to the profound 2006. While it may lack that wine's freshness, structure and potential longevity, the 2007 is immensely appealing today, and should drink beautifully pretty much out of the gate. That said, Sassicaia is always the most restrained of Bolgheri's heavy hitters. This is a superb effort from Tenuta San Guido. Reviewed by Antonio Galloni, October 2010. PACKAGING: Our premium wines need optimal temperature consistency, therefore are packaged in EPS foam shippers with gel pack (when needed) and shipped only during ideal weather temperatures.

For OWC (Original Wooden Case) orders, wine bottles will be removed from case and shipped inside a foam shipper box for safety (unless otherwise requested). The wooden case will be shipped separately at Ground service. If faster service is necessary please contact us.

WEATHER HOLD: In adverse temperature conditions, we reserve the right to withhold shipment until ideal temperatures return unless we receive explicit instructions via email to release the wines, voiding any guarantee. We will contact you if a hold is necessary.
